My husband and I were having family guests over the other night, and I wanted to make a nice dessert to serve after dinner. For love of simplicity, I usually dart to the supermarket for a brownie mix. The add oil, water, two eggs, stir and bake is the kind of simplicity I understand. I had a bit of a craving for cheesecake, though, so I decided to browse the Internet and see if I’m even capable of making such a decadent treat. Lo and behold, I found a great cheesecake website and served the best dessert I’ve ever made!
My family and friends absolutely raved about my Brownie Cheesecake, so I love to share this amazing recipe! Not only is it delicious, but it must be simple to make – after all, I pulled it off!
Ingredients:
- 8 oz prepared Brownie Mix
- 16 oz Cream Cheese, Softened
- 3 Tablespoons heavy whipping cream
- 1/2 cup Sugar
- 2 Large Eggs
- 1 tsp. Vanilla
- 1 cup Milk Chocolate Chips, Melted (Learn from my beginner’s mistake- melt the chocolate chips in a saucepan on the stove, do not try this in the microwave!)
Directions:
- Grease bottom of 9-inch spring form pan. (You can use substitutions for this pan, but it’s a worthwhile purchase- you’ll want to make many cheesecakes after this!)
- Prepare the brownie mix as directed on package. Pour batter into pan, bake for 15 minutes at 350F.
- Combine cream cheese, whipping cream, sugar, and vanilla. Mix on medium speed with an electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Pour cheese mixture over brownie layer.
- Spoon melted chocolate over the cream cheese mixture, then cut through with a knife for a marble effect.
- Bake at 350F for 35 minutes. Loosen cake from rim of pan; cool before removing rim of pan. Chill.
This recipe is sure to please! If you’re not in the mood for Brownie Cheesecake (Yeah, right!) – check out the recipe website for a delightfully mouthwatering list of variations.
