Easter Eggs – and More!

When you can’t decide between breakfast and lunch the perfect choice is to create a brunch. Easter is a holiday that brings families together. Have you ever wanted to host the family get-together? A brunch is the easiest and most economical way to become the hostess with the mostest!

Choose three main course dishes. Resist the temptation to take on more than you can handle. If family members offer to bring things, accept their offer graciously, and if they ask what you want them to bring suggest a few items that will compliment your planned menu. With a brunch if someone can bring blueberry muffins or a dozen fresh bagels, that is always a good thing and will provide some variety.

Ham is a traditional Easter menu item. It is also relatively simple, so plan on having an oven baked ham. Since it is brunch you will want to have an egg dish. A strata is a good choice since it is baked in the oven and your oven will be on anyway cooking the ham.

Pancakes are a good choice for rounding out your menu. They can be made the day before and just warmed up before serving. Add a big bowl of fresh seasonal fruit – strawberries, bananas and grapes sliced and served with whipped cream is nice!

There are lots of special little touches you can add to make your brunch extra special; you can warm the pancake syrup, or choose one of the specialty flavored syrups such as butter pecan. Fill a glass bowl with colored Easter eggs and use pastel napkins and paper plates. Set your meal up buffet style and let your family serve themselves. Add pitchers of juice and carafes of fresh coffee or tea, and wait for the compliments to come your way.
