Who would have thought that little colored dots could be so addicting. Especially when you add Sangria and some great snacks. Why not invite some friends over for a fun night of Mexican Train dominoes and good food?
Mexican Train is a game involving twelve dominoes are color coded to help you match the dots. This type of dominoes requires quite a lot of table space so you will have to plan your menu accordingly. Set up needs to be on a separate serving area. Finger foods are a great choice. A Mexican themed menu is the perfect match.
Begin with a pitcher of Sangria, limeade or margaritas (either virgin or alcoholic) or some Mexican beer. To keep clean up to a minimum, consider using attractive disposable cups and colorful paper dishes. Pass napkins along with these appetizers to keep the dominoes from getting greasy!
Spicy Chicken Quesadilla
- 4 8” tortillas
- 1 cup precooked diced chicken
- 1 cup Mexican flavored cheese
- ¼ sliced jalapenos
Build the quesadilla on a dinner plate. Place one tortilla down, add the chicken, sliced jalapenos and cover with cheese. Place another tortilla on top. Heat a 10” or large skillet over medium heat, spray with non-stick spray. Transfer the quesadilla to the skillet and cook about 2 minutes on each side, until the cheese is melted. Remove to a platter and cut in 4 pieces. Repeat. These can be covered with foil and placed in a warm oven while other things are being prepared. Serve with sour cream and guacamole.
Mexican Wings
Grab a bag of frozen Buffalo wings when you are at the grocery. Place some taco seasoning in a large bowl and empty the wings into the bowl. Toss and cook per package directions. Serve with ranch dressing for dipping.
Add some chips and salsa and you are all set for a great evening!
